Haven't had ANY fat in over a year- want to add it back in- which fat is easiest to digest?

I cut ALL fats out of my diet about a year and a half ago because I have severe IBS-C and gall bladder disfunction, and I feel a lot better without it, but it's time to add it back in because my body NEEDS it. So what kind of fat should I start with? Which is the easiest fat/oil to digest and absorb? What's the easiest way to eat/digest it?
