Too many people simply eliminate insoluble fiber foods from their diet completely. This is NOT healthy, for IBS or otherwise. The best way to learn your way around this is to scrutinize the recipes in Eating for IBS and on the website and Recipe Board. They'll give you great ideas for how to incorporate a wealth of fresh fruits, veggies, beans, nuts, and whole grains into a high soluble fiber basis.
Remember that anything that manually breaks down insoluble fiber before you eat it (cutting, chopping, pureeing, cooking - even thoroughly chewing!) will really minimize the risk to your IBS.
So make that veggie soup, and blend some fresh fruit into a smoothie to go with it, and puree some beans in to a dip for bread on the side!
