Okay, firstly and most importantly, you CANNOT self-diagnose IBS. There are lots of things that have similar symptoms and some are serious, so you must get a proper diagnosis.
IBS is diagnosed by ruling out everything else, so you need to have stool tests, a colonoscopy and check that it's not an allergy (eg. Celiac).
Next, until you take all triggers out of your diet, then bad days are going to happen. Even when you're stable, then sometimes it just all goes wrong. So many things can trigger IBS - stress, illness, diet, traveling, weather - that ruling them all out is pretty much impossible. Sorry!
Get to your doctor and get diagnosed. Then you can know for sure what it is and do your best to manage it.
