Gluten is a protein found in wheat grains. It's what gives wheat the elasticity. Bread made from wheat doesn't fall apart or crumble because the gluten holds it together.

Gluten is found in wheat, rye, barley, and other less common grains like kamut and spelt. Oats are controversial, some say oats don't contain it as long as they aren't cross-contaminated with other grains.

Buckwheat although it has the term 'wheat' in it has no relation to the wheat grain. It's actually not a grass like wheat, but a seed of a fruit plant I believe.

The buckwheat noodles are traditional Japanese soba noodles. Nowadays most are made with some wheat, but you can find 100% buckwheat noodles at most health food stores. They're gluten-free and very tasty.
