I agree with Zara that once you get more comfortable with substitions the cost gets more reasonable.

There are lots and lots of brownie recipes in the Recipe Index. The Anti-Depressant Brownies are very good and the Ultimate Chocolate Pudding Brownies JenM talks about in another thread are to die for. Neither of those recipes are difficult to make.

Ice cream substitutes are trickier. There are recipes on the Recipe Board to make your own but that seems like a bigger deal to me than making your own brownies - although I plan to ask for an ice cream maker for Christmas. If you have a Whole Foods near you, try looking there for ice cream. I can buy a quart of Soy Dream Mocha Fudge for $4.99; 1.75 quarts of Breyer's Coffee Ice Cream will cost me $4.79. So the soy ice cream is definitely more expensive but not as expensive as it sounds like your health food store ice cream is.

For whipped cream, see if you can tolerate Cool Whip Lite. It contains "less than 2% of sodium caseinate" which is a milk protein that a lot of people on the Boards can tolerate as a food additive in such a small amount. I do fine with it. It also has HFCS which I tolerate well now but didn't when I first started the diet.

Try some place other than a health food store for soy milk, also. At my local Stop N Shop, I can buy 1/2 gallon of Silk for $3.89; 1/2 gallon of whole milk is $2.49. Rice Dream, sadly, is $4.78.
