I'm also sensitive to gluten and dairy, and am IBS-C. Where I'm from, eastern Canada, all the grocery stores carry lots of gluten-free products - my favorites are the "Enjoy Life" brand cereals and breads, and they carry some frozen gluten-free Food-for-Life rice and almond bread that is SO good. My boyfriend who doesn't have IBS prefers this bread to the regular stuff. The almonds don't bother me, even though nuts usually do, but you might want to be careful. Also, potato pasta is delicious if you can find it - I prefer it to rice pasta. I believe these brands are made in the US.
What I have found is whenever I accidentally eat some wheat or dairy I eat a banana and some room temperature water to keep my colon working correctly. It helps every time. Thai rice sticks (vermicelli) are also the perfect thing at any meal - they're made of just rice and water, and are really good with stir-fry. I find I eat at home a lot, but when I go out I go to the organic-friendly restaurants and they are almost always prepared to make you a good gluten-free meal.
