Hey, I can sympathize. I'm not much of a cook, either.

For IF, you can make brown rice instead of white. Some of the short grain types (sushi rice) are pretty digestible, if you have trouble with brown rice. I cook up big pots that last 2-4 days--that I incorporate in meals, desserts, etc.

I make big pots of soup that have lots of different vegetables, some of them with IF--celery, carrots, red peppers, crushed tomatoes, lots of mushrooms. I figure the long-cooking and moisture is good for my C. I serve that with rice, or I cook up pasta. My husband makes no objection--he adds cheese of sliced chicken breast. Sometimes I make a salad for him, but raw salads give me problems right now.

Easy: baked potatoes, sweet and white.

I just starting blending fruit into smoothies (with rice milk and soy). I'm pretty sensitive to fruit, but I think this is working. I warm up some leftover white rice and soymilk (or rice milk) in the microwave, and then blend it smooth with a couple of strawberries, a banana, or some papaya--add sugar and vanilla. Makes a nice treat. The fruit goes down OK and helps with the C.

Sorry--not exactly Meal Plans. But for Fiber and C, think chopped, cooked, blended, moist---and balanced with IF.
