Hi - You can keep both bags unopened for several months without any problem. The fennel is actually whole seeds, so it won't go rancid (there's actually not enough oil in them for that). But if you crushed the seeds, the volatile oils would be released, and they'd evaporate, and then the fennel wouldn't be very potent. To keep it super fresh, just freeze the whole sealed bag.

Since you're doing just fine, you can stay the course and not try anything new. Starting the fennel shouldn't do anything to upset you though -it won't take any time period to adjust to it or build up a dosage, you can just start drinking a cup (or several) of the tea every day. Will only help - can't hurt.

The acacia you could start really slow, especially since you're nice and stable now. It will just give you an extra measure of stability, and ideally you'd work up to a full dose which would then really keep you super stable. You can start with just 1/2 tsp twice a day and see how you do, then increase very gradually. This shouldn't rock the boat either.
