You have a separate issue in addition to IBS. I'm sorry about that because it sounds pretty bad, but there's no way for anyone to tailor advice to you without having all the information.
So, in general, I agree with K2 - the reason to take Acacia in addition to Soluble Fiber foods is because it is difficult to get as much Soluble Fiber as is helpful for IBSers simply through food. Therefore my advice would be, no, don't skip your SF foods because you're taking an SFS. In order to get enough SF you need both.
However, you're in a somewhat different situation from most IBSers since you want to consume less fiber overall than is recommended by the FDA and than most IBSers find helpful. Given this new information, my advice would be to cut back on the Acacia rather than the SF foods. I think it's always better to get what we need nutritionally from food rather than from supplements, assuming that's possible. And there are people on this Board who do, in fact, get SF only from foods and do well.
There's no reason why Soluble Fiber foods have to be bland or boring. There are lots of recipes in the Recipe Index for Soluble Fiber dishes that are quite exciting.
As for your demand that we preface our advice with "for otherwise healthy individuals", I have to admit that made me chuckle. No one on this Board is an "otherwise healthy individual" - that's why we're all here.
