You should do fine with the ice cream as desert. I just wanted to make sure you knew it wasn't a good idea to overeat it or on an empty stomach. Syl mentioned some of the oils being a problem, but this will depend how sensitive you are to it, and how much you eat of it. So you won't know until you try it out.
I too am underweight so I use products like this to get a bit more fat in me. When I meant it was high in fat, I was comparing it to what Heather suggests for her diet. She suggests keeping 25% of calories from fat per meal. So for a food with 50% of calories from fat, you should eat lower-fat safe foods with it as your small meal.
Some other things I do to get more fat in my diet is eat avocado, salmon, small amounts of peanut butter, and plenty of sources of protein. I also do weight training which helps not only with keeping my weight up, but also keeping the bloating down (by doing abs).

Wow I can relate to that! I was like that for a few months at one point in my teenage years. I always wanted my stomach to be smaller, but it wasn't fat, just bloating from my IBS. I now realise eating properly makes me less bloated than eating nothing. I wish I knew this earlier.
