You sound just like me four months ago!! All I can say is, stick with the diet. I, too, had a very hard time incorporating IF at the beginning, which makes C even worse. And yes, sometimes the attacks are so random, and it's very possible you ate nothing to provoke it at all. Here are a few suggestions that really helped me. I've been stable for about a week now, which is a new record for me!
Smoothies: absolutely the best and safest way to get fruits, first thing in the morning. Blend a banana with various IF fruits (berries, peaches, etc.) and some rice milk. I use frozen IF fruits.
Soy: You might need to cut back on this for awhile. I found that soy milk gave me gas, but I can tolerate small amounts of tofu now. Try taking beano every time you eat soy, beans, veggies, etc. (I take up to four capsules at a time)
Soups: IMHO, the safest way to get IF veggies. I just posted two yummy blended soup recipes to the Recipe Index; give those a shot.
Bean Dips/Spreads: There are several in the recipe index. Another good way to safely incorporate IF into snacks and meals.
Eat every 2-3 hours: I eat very small amounts every few hours. This keeps things moving throughout the day. When things slow down or stop, gas builds up. Smoothie for breakfast. Few hours later, small bowl of cream of rice. Few hours later, slice of banana bread. Few hours later, lunch. You get the idea...
Natural Calm: This has "cured" my constipation without a doubt. I take several teaspoons each night. It's like magic!
Exercise: Do it every day!! Especially important for those of us with C.
