SIBO is something different from IBS - although you may be misdiagnosed with IBS when you really have SIBO or you may have both SIBO and IBS, they are two different conditions. So what you need to know is whether the course of antibiotics got rid of the bacterial overgrowth? If not and you're convinced SIBO is your problem, you need to talk with your doctor about what treatment happens next. If the SIBO is gone and you're still having symptoms, what is your doctor's diagnosis now?
As for your diet, I'm IBS-D and would not do well on it, especially when my tummy is in an uproar. Again, I can only talk about with regard to IBS, not with regard to SIBO.
I would feel better eating meals with more SF, especially first thing in the morning. I'm not sure what oat bran is, but anything with "bran" in it is tough on my tummy. Shredded Wheat I assume is a whole grain also. I don't know anything about Captain Crunch, but Cracker Jacks are popcorn (IF), nuts (IF and fat), and - I assume - HFCS. I know graham crackers are - or were - on Heather's list of WTEWYCEA, but they have more whole grain than I can handle, especially when my tummy is in an uproar. As for peaches and pears, the skin is a pretty tought IF. Spinach is a classically brutal IF to digest.
None of the IF you're eating is bad per se and if I'm doing well I can eat all of it - except the whole grains - provided I do so with a solid SF base. When I'm not stable, though, I wouldn't touch any of it with a ten foot pole.
I can't really speak to trapped gas and bloating, but my frequency and incomplete evacuation (a classic IBS symptom) were resolved by following the EFI Diet and taking a lot of SFS. Again, however, you first need to get retested for SIBO and if it's not resolved, decide with your doctor how you're going to proceed in that regard.
