Welcome to the boards!
I've been in similar situations - I guess all you can really do is just say you have a medical problem that means you can't drink, but just don't explain it. If they ask just roll your eyes and say "yeah, like we want to talk about my problems on a hen night!" or "don't ask, it's way too complicated!" ?
Besides, try focussing on the positives - you'll always be sober, so can make sure everyone is safe and gets back to where you're staying ok! Always a good idea to have one sober person on that kind of thing...
I'd start planning your food now - what's the plans for eating while you're there (like are you self catering or half board, etc). Also, you can take some safe staples with you, and you can always get bread/pasta/rice/potatoes etc in restaurants to cushion other foods, and you can usually get some chicken or something. What do you do when you eat out in the UK?
