I checked the label and it was pretty high in fat, so I checked the ingredients -> Turkey thigh meat. Those hard bits are what you find sometimes in sausages and non-lean ground beef, so I assume it's pieces of fat. I found some ground turkey breast, but I haven't been able to find it since and can't remember the brand name. Ground chicken breast may be easier to find, as well as soy alternatives.
