As for the peppermint... if you look at the cylinder where the tea goes, I would fill it to just below where the little holes start.... that way when the peppermint gets wet and expands you will still be able to "press" all the way down. Now that is just how I do it...if I would have followed the directions that came with it, it would have been WAY too weak for my taste.
