Yep, it's the fat content. Most of that fat is saturated as well, and that's a lot harder for your body to digest. Plus, the proteins in meat are much harder to digest than plant proteins. Meat also has zero fiber and is a very low water-content food, which doesn't help.
Most meat is not organic, in the sense of organically produced foods that are labeled as such. Unless you go to a health food store and buy meat specifically labeled "organic", or you raise and slaughter your own animals the old-fashioned way, any meat you get is going to be full of the antibiotics, growth hormones, and any other drugs the cattle are routinely fed. I've heard from enough folks with IBS who are very sensitive to additives and chemicals in their foods to think that any non-organic meat is going to be even tougher on them. That's why even for IBS safe options like chicken breasts and egg whites, it's a safer choice for your GI health to buy organic. It certainly can't hurt.
