soy flour has no gluten. Gluten is essential to the food chemistry of baking. If you need to go gluten free, follow special gluten free recipes (check the recipe index or do a board search) or check out a gluten-free cookbook.

You can usually add a few tablespoons of soy flour to regular flour recipes. White flour will give you a soluble fiber base, so need to worry about that. Soy flour adds protein and also moisture. Always use it in small amounts or your recipe won't come out well.
