Turkey on white. Lettuce and tomato if you can handle it. Mustard or barbecue sauce - my personal favorite! Chicken breast is another good deli meat. If you go with the pre-sliced packaged stuff, you'll also be able to find turkey ham.
Tuna or chicken salad, made with lite or ff mayo.
If you can do the lettuce and tomato, you can also have a BLT made with turkey bacon and lite mayo.
If you like egg salad, egg salad can be made with just the egg whites, and add a squirt of mustard in with the mayo... you'd be surprised how good it is.
Personally, one of my favorite lunches isn't a sandwich at all. I make up a batch of tuna salad (or chicken salad) and stir in cold cooked pasta and peas. Season it up, shake some soy parmesan on top... yum!
Be careful with the PB&J, though... too much peanut butter is a bad thing for IBS'ers, generally speaking, because of the fat content.
