Peaches, I managed to c & p this. I asked Tess abt the recipe before giving it to you and this is the recipe and what she said.

That does sound like a LOT of margarine...and substituting canola oil wouldn't do any good, it's still fat, and it might taste funny. Plus, peanut butter is high in fat, too. You might experiment with using half as much margarine, but I'm not sure that's a recipe that can be adapted--sorry.

Don't know how margarine affects you. Could use lo fat tho and I KNOW that ALOT of people use lo fat peanut butter all the time on rice cakes, etc. You can spread it with anything you like, jam, crunchy or plain p butter, etc. The lady said she has some trouble using chocolate and butterscotch.
It's VERY sweet and it seems to me that 1 stick (possibly less.....as long as it sticks together) to a 2# bag of sugar wouldn't be bad (for me at least). Think you could increase the potato to 1 1/2 c.
Hope it works for you. NIce.....cause you can freeze it. Since choc syrup is OK, you could dip it in some when you go to eat it........... or honey, etc.!
