I am so sorry your tummy is so unstable right now, hopefully it will begin to calm down and you will be able to tolerate more foods that will give you more energy and take the edge off feeling so tired. I think that getting protein is very important, but I know it can be very hard to digest. You said that you cannot tolerate peanut butter, and that may be because of the high fat content. Have you tried low fat peanut butter in very small amounts? I used to put little bits on rolled up flour tortillas and never had any problems. Grilled white fish, along with the chicken you are already having, is a good source of protein and is generally pretty gentle on your tummy. Try small amounts of cod or hallibut or something like that with rice or some other soluble fiber foods. Are you making sure that you are eating every couple of hours? Your body needs fueling, and especially if your diet is so restricited, you want to make sure it is getting something ever few hours.
As for vitamins, do a board search on this as there have been a lot of posts on this in the past. I personally take a generic brand childrens vitamin, twice a day. The other brands all had sugar alcohols in them (sorbitol, manitol, etc) that can be very, very irritating even to people without IBS so be very careful of these additives if you do look for some vitamins. Also, don't get ones with extra vitamin C added as vitamin C can aggravate D as well.
If you can have potatoes, try sweet potatoes as well. They have a few more nutrients in them that your body is probably wanting. Have a look at the list of safe snacks at the top of this board and see if any of them might sit okay with you.
