Sorry, but to get stable you'll have to avoid all forms of dairy. Lactose is one of the reasons to avoid dairy, but not the only reason. If you read the studies and FAQ/diet guidelines that Heather provides, you'll see that dairy is a big trigger for IBSers because of the milk proteins and high fat content.
