Makes sense. It sounds sort of like the IBS rules - good (SF) to balance, or in the case of IBS, cushion, the bad (IF). I can see where your problem is going to be that some of your bad (SF) is the IBS good, and vice versa. There are some commonalites, like eating small frequent meals. Also, assuming you're NOT allergic to soy, there are soy cheeses and yogurts. Too bad about eggs - egg whites are a nice, fast, portable form of protein.

My thinking in asking if rice being unsafe meant rice milk and rice cheese were also unsafe was that maybe processing rice into something else changed its glycemic index (if I'm using that phrase right). That is, there are supposedly things like rice protein powder, so I wondered if the milk and cheese perhaps just extracted the protein and so changed the glycemic index to something more bearable.

Can you tell I don't know what I'm talking about?

Anyhow, thanks for the crash course. Good luck balancing your hypoglycemia balancing act with your IBS balancing act. (Sort of like the guy riding the bicycle on the high wire, while carrying a pole with whirling disks on each end!)
