Personally, I use Smart Balance Light, which is pretty much the only supermarket-available brand of margarine that's dairy-free. Be sure to get the "light" - the regular SB has dairy in it. If you go to a health-food store, you can find plenty of soy margarines that taste good and buttery - I have a tub of Soy Garden in my fridge right now, and it's pretty good. I only use it for baking, though, as I prefer the low-fat stuff for eating.
Just when you're starting out, figuring out what your body can and can't tolerate, and trying to stabilize, fats can be *really* tricky. Yes, for the long-term, eating fat-free isn't healthy, as your body needs fats. But at first, temporarily, it's not a bad thing at all. Fats are definitely an IBS trigger.
Bananas have fat in them, by the way... so you wouldn't have been *totally* fat free.
The cold drinks were just a thought or an idea. When someone posts that they're having attacks, we typically try to guess ANY possible cause, in case the attacks continue... this way, the person can look at ALL of the possibilities if changing one thing doesn't work. It's still possible to have something trigger you even the day after you've eaten it, so you just never know!
