By taking only small amounts at each meal - fat should be no more than 20% of your calories at any meal, but you can still get enough healthy fats this way.

****Please note Augie's post above about searching. Answers to a lot of the questions you are asking are already available on this site and you'll probably get better luck with doing a search instead of posting everything!
