Eating fruits and veggies

Hi,

This is my first post, so please forgive any gaffes. I found this site about a month ago and now I feel better than I have in years. I've followed the diet, started on acacia (I'm up to 12g/day), fennel and pepprmint teas, peppermint caps, etc. I'm so grateful to all of you who share your experiences and wisdom on the boards, and especially to Heather...Thank you!
My question has to do with insoluble fiber...It seems to be a trigger for me, and I'm afraid I'm not getting enough fruits and veggies in my diet. Any ideas on how to incorporate the insoluble ones without agony? Taking an SFS first? Cooking them to mush? (Ug.)
