Ginger, Peppermint, and Fennel ?'s

I'm trying to understand how ginger, peppermint, and fennel work differently. Which one works best for what symptoms?

Also, I had taken enterically coated peppermint on and off for years and found it helpful for attacks. But lately it hasn't worked--but peppermint tea does. Anyone know why?

And, finally, how do I make tea from fennel seeds? I thought I had seen a recipe on the site somewhere, but now I can't find it.
