EnErG foods makes an egg substitute called Egg Replacer that works quite well in baking. Good gluten-free breads and muffins can be made with it, combined with rice flour or a combo of gluten-free grains. It's made from tapioca, btw. There are a number of good breads in the Gluten Free Gourmet books (I think someone else recommended these in another post). I also have a cookbook I like called "Allergy Self-Help Cookbook" by Marjorie Hurt Jones. It has recipes for foods free of wheat, milk, eggs, corn, yeast, sugar and other common food allergens.
