I don't know anything about sulphur in fruit, so I can't help you there.

Any dry bread crumbs that don't contain dairy or derivatives (like whey or casein), butter, or cheese are fine. I use store-brand plain bread crumbs, and have never had a problem with them.

Olives in general are high in fat and should be eaten with great care - not very many of them, and always with a soluble fiber base.
