hey don't feel bad about asking me questions: its my pleasure...I went GF because I felt more C when I ate wheat...turns out it was too much white wheat etc was making me C and I wasn't eating enough fibrous things too..classic C! Sounds to me as if you should stay off the gluten foods because of your results, and if it isn't too much hassle I suggest you have more tests repeated because GF is NOT fun as you said but you must stick to it if you need to...or you won't absorb nutrients properly.
I feel that spinach and asparagus help whip out the poos more then carrots etc, but I feel that the carrots etc help form the poos into proper logs as opposed to sloppy mess...so I eat them together...its just trial and error really.
If I were you right now (and if you have time and enjoy baking) I would start a new hobbie of adapting recipes to wheat free etc...some may turn out as disasters but some will be wonderful!! It would be a lovely thing for yourself. Good luck!
