How about soy milk, tofu and tofu products (burgers, dogs, "chicken nuggets, etc)?
You can also take a soy protein shake which is what I did for a few months.
You use non-dairy margarine on veggies or non-dairy sourt cream on potatoes.
As for salad dressing, look for a very low, or no fat, one in the store. I make one by using balsalmic vinegar, a tiny bit of olive oil, 1 clove of pressed garlic and a tiny bit of dijon mustard. It's so yummy and when I serve it nobody ever knows it's "healthy".
