If the chicken is breaded before it goes into the sauce, that means it's deep-fried - avoid it at all costs. Alot of the chicken dishes - General Tso's, Sesame, etc - are deep-fried. Just something to be careful of.
Things I always found pretty safe were the curries (not as hot as Indian curries, and the shrimp/chicken isn't fried), and on pretty much every Chinese menu these days, you'll find a steamed chicken (sometimes they call it "health" or note that it's steamed with a garlic sauce) and something called "Buddha's Delight" (or something similar), which is vegetarian and not fried, with a sauce on the side.
Can't you tell I used to eat a lot of Chinese? Haha.
Skip all the appetizer-type-things; none of them are really safe, unless they have steamed vegetable dumplings, which are heavenly.
