Hi Kim,
What I've done when I really want to have salad and my tummy is feeling very sensitive, I create a "blended" salad. I put the lettuce greens and other vegees into a blender and put in purified water and blend it to just before it starts to fold in on itself. If I want to chew my salad...I put it into the food processor and hit the chop button for two - three pulses. But salad, according to Heather, should be eaten last after your tummy has been filled with soluable fiber like squash, sweet potato, red bliss potatoes, pasta or rice.
When you think "beans"...think a half of a cup of beans to a full cup of brown or white rice. The beans should be cooked very, very well to the point of being mashable. I find that I fare well with Aduki, red, black bean and lentils. Also if you cook your beans in a separate little pan in water and then before you serve it...get rid of the cooking water...this will go along way to irradicating the part of the food that causes the gas factor. Cooking beans that don't come in a can..that come dry on the store shelf bag....put a piece of kombu (seaweed) into the water at the last half hour of the cooking process.
