Try to get there early to scope things out - look for places to buy your own "safe" foods, meds.
Bring a suitcase/backpack with your own food, water meds. and keep it with you at all times.
I ran a very large event and it's not too late (do it on Monday if that is the first day of the conference) to let the conference organizer know that you have special diet needs. They in turn can let the hotel know. You can ask for the name of the person to contact directly if you prefer.
