High cholesterol, triglycerides, and soluble fiber--Heather can you comment?

My OB/GYN had me get some blood tests and they show that my cholesterol and triglycerides are high. I've had trouble with this before, but last year they were much better. I thought this was due to eating no red meat or dairy. But she tells me that eating too many carbs like rice and bread can contribute to the triglyceride problem.
I am gluten intolerant so I eat rice (white and brown), rice cereals, brown rice pasta, and occasionally rice bread. From what the doc is saying, eating much in the way of white rice is problematic. But I thought if I ate the rice with vegetables and protein it wouldn't be a problem. And white rice really works well for me if I'm having a flare-up.
I'm confused and wondering if there's any connection in my soluble fiber intake and the cholesterol/triglyceride thing. And I'm frustrated because I have been really strict with the IBS diet, and I am finally, after almost a year, having some really good luck and feeling better!
Oh--Because I can't tolerate SFS, I increased the amount of soluble fiber I eat (including all the above products as well as applesauce, avocados, yams and that kind of thing). Could that be a problem?
