sourdough bread where to get it in australia? & other bread questions

Hi,

I'm still fairly new to the whole IBS thing and seem to do well if I stick to rice, rice and rice (getting boring now!!) as my staple food within this diet. But not sure about the bread Heather says should be ok.
I was suspicious that I might have had a problem with wheat or gluten (or both) so had been using a wheat & gluten free bread for almost 3 months now with no probs ... but I don't like it!! (is ok toasted for a quick work day breakfast with marg & honey - but awfully crumbly and quite off putting when trying to make sandwiches out of it!!!)
Anyway - I really missed 'real' bread so thought it about time I tried Heathers suggestion of sourdough bread - but our bakeries here don't seem to bake sourdough breads - all they offer me is italian breads like eg: ciabatta, and pani de casa. Are these also safe??
I bought some ciabatta, and a french stick and have eaten this cautiously in small amounts for 2 weeks with no probs - but ran into probs last night and this morning after having it for lunch yesterday with smoked tinned muscles, and this morning when I had it with just margarine. (I did have quite a lot and I did use margarine - but I also use margarine on my daily GF free toast with no probs for months.)

I'm beginning to think maybe I can eat a little of this bread but not too much of this stuff - is it possible that it's a slow 'build up' of it that's bad, but just one meal a week or so is alright ??? ..... or maybe it's not the bread at all but is the margarine??
Confused!!

I Had been tested by doc ages ago for celiacs (took a small biopsy of skin rash for testing) and came up ok so doc said gluten should be ok. But we eliminated it anyway - just to see for ourselves.

Are there any others here who can not eat the breads at all - if so what are you eating?
Life would be SO much easier if I could have this bread, when out and about so I'm really really keen to work out why this bread is no good and if there's another nice tasting available option??
