Zucchini bread

I made Heather's zucchini bread with high-quality cinnamon and it is too good to stop eating. But it is putting a big dent in my fat grams for the day (I do 30 or less). Has anyone put half oil and half applesauce? I like it better than banana bread and I like eating a vegetable that way too.

You can add extra shredded zucchini to replace some of the fat, but I wouldn't add less than 1/4 cup oil per loaf (I can't remember what the recipe calls for - I think it's somewhere between 1/4 and 1/3 cup per loaf). Any less fat and you won't get as good a result, and the bread won't last very well either.

Yup, I second this. I took my father's tried and true zucchini bread recipe, once upon a time, and replaced ALL of the fat with applesauce. The bread was a little more dense than usual, but other than that, it was super-tasty. *But*... it went completely blue with mold in 2 days. Yum. If you decide to try it, I'd plan on slicing the bread up, putting it in sandwich bags, and freezing it.

I wasn't thinking of trying it, but this is VERY good to know. Moldy bread: Yuck!!!

Yeah mold- I never would have thought about that. It calls for 1/2 cup oil and makes 2 loaves but each slice has 4 grams of fat and I want to eat more than 3 a day. I still want to lose 7 pounds so I am watching the fat (and cals) even though the food I eat is healthy.
