Here's one I really like. You can make a small bowl (like for one person) or a huge bowl. Adjust ingredients accordingly.
Fresh red tomatoes Fresh baby spinach Feta cheese Fresh oregano |
Red wine vinegar Olive oil Honey Fresh-ground black pepper |
Cut the tomatoes into wedges, about the size you can eat comfortably without having to cut them further. Put a layer of them (say two tomatoes or so) into a large serving bowl. Take stems off spinach and cut it up with a chef's knife so it's in small pieces, like one-half-inch max size. Sprinkle a handful of this over the tomatoes. Crumble the feta cheese so it's pretty small (but not tiny) and sprinkle a handful of this over the spinach. Cut up the oregano to very very fine and sprinkle a little of this over the cheese. Make another layer of all four ingredients. Keep going if you're making a giant bowl.
When you have as much of the tomato blend as you want, sprinkle the whole thing with vinegar, just enough to moisten the top layer. Don't be too generous; you can always add more. Then drizzle it with olive oil (be generous) and honey (not so generous) and then grind some fresh black peppercorns over the whole thing. Be very generous with the pepper. Toss the whole thing very gently with a large spoon or spatula (or use your hands). Chill this in the fridge for at least an hour before serving. I usually decorate the top of it with a little more feta before serving, and maybe stick a few whole spinach leaves or oregano sprigs on top for decoration too. It's pretty, tasty, and nutritious, and I haven't found anyone yet who doesn't like it.
I've also used balsamic vinegar (but some pansy eaters don't care for balsamic) and I've used asiago cheese (yum!) rather than feta or in addition to feta. Adding kalamata olives is also not a bad idea.

This sounds wonderful for a potluck and one I will surely use. You always have great ideas. This may be a bit much for folks with IBS but for the normal crowd it would go over great.
I have another question since you are the in house bar tending expert. Ever make Cuban Mojitos? Watched the history channel on distillation and they showed how to make a great one, but then I did a search and they all vary to some degree. The one I saw used club soda after you infuse the simple syrup with the mint and add the rum. Other's don't. Use of the fresh mint and simple syrup MIGHT be an option for IBS folks who want a drink now and then but can't tolerate most mixed drinks.
Not an alcohol question, but ever make Bubble Tea (Boba tea)? I'm going to my Asian market tomorrow to get the supplies and the owner there said she'd tell me how to make a great one. I'm excited about working with the black pearl tapioca and the various flavor combinations. The Bubble tea, using decaf, may just end up a lovely IBS safe drink!!!

I think that a lot of different vegetables, diced, cooked, and chilled, could be mixed into it instead. Or skip the vegetables, and put some diced grilled chicken in it, and have it as dinner instead of a side. The dressing is really tasty.

This is one of my summer staples. I made it this past weekend for a cookout and got TONS of rave reviews. This recipe is just so easy and very good. I make it just as is, with the 1/2 c of dressing, and add grilled chicken also. Good stuff!
