Hi guys, another chicken recipe for you! I've tried this it's nice and only 5.1g fat.
serves four - six
350g wide fettuccine 4 skinless chicken breast fillets 1 clove garlic, crushed 1/2c mushrooms 1 small leek, thinly sliced 1/4c white wine 1/4c fat free chicken or veg broth 1T madeira
Cook pasta in large pan of water, drain and keep warm. Cook chicken fillets in a heated, non stick pan (I use a little olive oil spray) until golden brown and cooked through. Remove chicken and keep warm. cook garlic, mushrooms and leek in same pan, stirring until mushrooms are brown and leek is soft. Stir in wine, stock and madeira, simmer for 4-5 minutes or until flavours are well combined. Slice chicken into thick pieces, place on serving plates and top with mushroom leek and pasta. Drizzle with remaining broth.
Enjoy, Kerrie

It's a type of wine. I think it is a sweet white wine? Originally from the Island of Madeira off Portugal. I believe it can usually be replaced with white grape juice in cooking if you can't find it.
