Oat Coated Chicken with Sage

I haven't tried this yet but thought it sounded good...(if you tolerate oats OK)
Oat-coated Chicken with Sage
3T soy milk 2t english mustard 1/2c rolled oats 3T chopped sage leaves 4 skinless chicken breasts 1/2c low fat natural soy yoghurt 1t wholegrain mustard s and p fresh sage leaves to garnish
1. preheat oven to 400F. Mix together milk and english mustard. 2. Mix oats with 2T of the sage and the s and p on a plate. Brush chicken with milk/mustard mixture and press into oats to coat. 3. Place chicken on a baking tray (lightly sprayed) and bake about 40 mins or until cooked through. 4. Meanwhile mix together yoghurt, wholegrain mustard, remaining sage. 5. Drizzle yoghurt sauce over chicken and top with sage garnish to serve. 6. Serve with rice and some steamed vegies if you wish.
serves 4 Adapted from recipe in quick and easy chicken dishes by Linda Fraser.
*The recipe states that if fresh sage is unavailable, choose another herb such as thyme or parsley rather than using a dried alternative.

kinoz do you have to put oats in this recipe?

If you can't eat oats, try using coarse bread crumbs or a crushed cereal (like corn flakes).
