Hi HEATHER: I am going to try your maple glazed salmon but what is mesclun and where do I f ind it?

Hi Louise - Mesclun is just a mix of wild greens. You can substitute a mix of things like arugala and red leaf lettuce or butter lettuce, or any mix of field greens you can find. You could also just omit the mesclun altogether.

Hi Louise - Try serving the salmon over brown rice instead. You need a soluble fiber basis for the meal.

That's too bad...I love them! This recipe was the first time I'd ever had them. You'll have to let me know how it goes with the brown rice like Heather suggested.
