I actually didn't put any cheese in mine...I have yet to find one that tastes ok, so I just omitted it and it tasted great anyway!

I'm finding I can't tolerate soy at all right now, so I just skipped the cheese when I made them last week, and they were still tasty!

I actually just used my left over mashed potatoes from the night before. Then I mashed in all the ingredients together and scooped them with an ice cream scoop and baked them like that.

When I made mine, I microwaved 2 potatoes, let them cool slightly, and mashed them, then went on with the recipe. I think you could use instant (prepared), though, if you make 'em up so they're more firm in texture.

For those of you counting calories....(which I KNOW that is NOT Casey)...... here ya go!
If you make it WITH the soy cheese they are approx 44 calories each ball.
If you make it WITHOUT the soy cheese they are approx 40 calories each ball.
I think I will try these this next weekend.... will make for a nice variety (right Kandee?)
