Does anyone have any ideas on how to make a safe garlic bread?

mince several fresh garlic cloves with a bit of salt until you have a paste. Blend the paste with just enough olive oil to make it easily spreadable. Spread a thin layer of the garlic/oil over your bread slices, then broil till golden brown and crispy. Yum!

Make roasted garlic - it's quite easy. Take as many unpeeled cloves of garlic as you'd like, and place them in a piece of heavy-duty foil sprayed with a bit of cooking spray. Close up the foil and bake at 350 for 30-40 minutes.
The garlic mellows out and becomes quite soft. Open up the skins, dump the garlic out, and mash a little with a fork if necessary. Spread it lightly on toasted bread, and season with salt/pepper/basil if desired.

I like to roast garlic (4 or 5 cloves) mash them up and add a Tbsp or two of soy margarine or olive oil and 1/2 cup of soy mozzarella cheese and spread over a sliced french bread loaf and broil until golden and bubbly. I also tried it with soy cream cheese (about 1/3 cup).....yummmm!!!
If you can't handle a lot of garlic, broil your french bread (sliced of course) just until toasted and rub with a garlic clove and then add mixture from above taking out roasted garlic and adding 1/2 tsp of garlic powder.

I do something similar to this, except I use an entire head of garlic and I put enough olive oil to cover about half the head. I know, I know, MAJOR fat content, but I don't use the oil all at once, and it is AWESOME for making mashed potatoes!

I just purchased Smart Balance spray (new buttery burst) and sprayed it on my french bread with garlic powder before broiling - pretty good!!! And I think safe to eat
