Sunday I leave for a much needed vacation in Florida. The first 3 nights we will have a room with a full kitchen. The last 2 nights we will only have a fridge & microwave. Other than sandwhiches what are some good easy recipe ideas? I have to eat as mild as possible when out of town because I flare up easily. Thanks in advance for your suggestions and replies.

If you have a fridge and everything - you could make some dishes up before you leave and then put them in a cooler until you get to your destination. Then you can keep them in the fridge and microwave them when you are ready for supper.
That way - you can still eat what you would normally eat at home.
Also - you can take instant rice. Dump in your spices and store in tupperware. Then when you are ready to eat it just add water and microwave 5 minutes. This is the way I do my rice all the time.
We will be going to the lake every weekend this summer and we only have a fridge and microwave as well so I will be doing alot of these meals.
If you have a George Foreman grill you could take that with you and just plug it in.
I read somewhere on the web about a lady who carries a kitchen with her in a seperate suitcase. I honestly think that's what I will be doing this summer. It's better to pack too much stuff then be without!

Thanks for the suggestions Lana, I'll be doing that this summer in our Travel Trailer. Unfortunately this trip is on a plane. I am packing some seasonings in suitcase.

Lana Marie's suggestions are excellent! Making stuff before-hand is a good idea. Some of the recipes don't even need the cooler. I've made angel food cake, gingerbread and banana bread and taken those with me on trips in ziplock bags. (That way I have plenty to snack on in case we don't eat at usual times.) Instant oatmeal packages rock, if you can tolerate oatmeal. Thai Kitchen mades a wonderful rice noodle soup in packages about the size of Ramen noodles that you can do in the microwave. And don't forget herbal tea bags, if you drink it.
