Hi everyone- I got this recipe from Wegmans Menu magazine (for those of you who have a WEgmans grocery store near you, you know they ROCK!) The recipe is quick and delicious.
Grilled shrimp and veggie tortillas INgredients: 2 lbs. raw shrimp, peeled 2 medium cucumbers, peeled, seeded and chopped 2 avocados, chopped 3 medium tomatoes, chopped 1 jar pineapple salsa (if you can't find this, regular salsa will work) 2 packages of 6 inch flour tortillas ( or any size you like)
Grill shrimp for a couple of minutes on each side, till they turn pink. Grill tortillas for 30 seconds each side. Arrange veggies and shrimp on tortilla and top with some salsa. (This recipe also called for asian coleslaw but I can't do cabbage) I think you could also cook the shrimp in a pan on the stove and put the tortillas under the broiler. This is really good! I eat 2 and my husband eats 3 for a serving, but we both have BIG appetites, so judge accordingly.
