There's been much to deal with in our lives lately. These muffins were really easy to make and yummy too. I got the recipe from our local paper and just had to sub soy milk for regular milk. Marmalade Muffins 2 1/4 C plain flour 1T baking powder 2 egg whites 1 cup soy milk (I used vanilla) 1/3 C Canola oil (I halved this and used applesauce for the other half) 5T orange marmalade 1T orange zest Preheat oven to 180 (350). Sift the flour and baking powder into a large bowl. Whisk together egg whites, soy milk and oil/applesauce. Stir the egg mixture through flour mixture until just combined. Fold through the marmalade and zest. Sppon mixture into 12 medium muffin pans lightly sprayed. (my mixture made 15) Bake for 15 minutes or until tester comes out clean.
