Hi: This is my very first post ever, hope it works. I'm an Artist, watercolor landscapes my favorite to paint. IBS-D for 25 years, LOVE Heather's cookbook. My favorite fast treat for one: Easy Chocolate Bread Pudding Oil Spray 1 large slice French Bread - torn into 1/2 inch pieces 1/4 cup honey 1 1/2 teaspoon coco powder 1/2 cup vanilla soy milk 1 teaspoon finely chopped walnuts Spray nonstick fry pan with spray oil, add torn french bread pieces, cook medium heat to slightly toast bread. Drizzle on the honey, sprinkle on the coco powder and stir once then add the soy milk and cook constantly stirring for one minute or less. Stir in the walnuts. serve warm in a pretty bowl. Enjoy! 1 serving.

This sounds wonderful, can I use Vanilla Rice Milk instead of Soy though??? Rice Milk seems to agree with me a little better.

How big is a large slice of french bread? I tried it today and it was good. A little too sweet, maybe I didn't have enough bread.

sometimes soy milk gives a creamier result (in things like ice cream and chowders) but in general the difference is negligible. Do what works for you!

Thank you for putting this super easy recipe up for us to try. I made it a little earlier today and it turned out great. I reduces the coco powder and put in some cinnamon and was well impressed. I plan on having that again!
I am a dessert girl and am wondering if you or anyone else has any other fun dessert recipes. Cookies or anything. It would be nice to be able to take something to work every once in awhile to have on my lunch break.

I tried this recipe using fat free caramel topping instead of the honey. I just drizzled it over the bread (I probably used about 2TB) then sprinkled cocoa powder over it all, added vanilla rice milk, cooked it as you suggested, and violá, a wonderful dessert! You can adjust the amount of caramel sauce and cocoa to suit your own tastes. Since I've cut out sugar, I seem to be happy with a small amount of sweetness. Thanks, mmmmmmmm
