I recently began experimenting with making french toast. I eat a bowl of oatmeal every morning but I wanted to have something special on Saturday mornings. Heather has a french toast recipe in her book but it requires a little prep work the night before. Of course, I am too disorganized to remember so I started experimenting.
Pam's French Toast
half a loaf of day old french bread, cut into 1/2 slices 4 egg whites 1/4 to 1/2 cup of soy milk 1/2 t. vanilla extract cinnamin or pumpkin pie seasoning 1 T. canola oil
Heat up skillet and spread oil evenly over it. Whisk together the egg whites, extract, cinnamin and soy milk. Generously coat bread in egg mixture and cook several minutes on each side until golden brown. Drain bread on papertowels. (I drain as a precaution but because I am using so little oil I don't really see much oil on the papertowel) Top with a little preserves or powered sugar. Yum.

Pam, I made your French toast recipe for breakfast this morning and it turned out very well. I used the full 1/2 cup soy milk and six slices of sandwich bread for the two of us, and I sprayed the pan generously with nonstick spray instead of using oil. We had turkey bacon, too, which my boyfriend broiled, not that it had a lot of fat anyway. Just wanted to thank you for the recipe! Amelia

Hi Pam; i WAS WONDERING HOW FRENCH BREAD WOULD GO FOR FRENCH TOAST. hOW MANY SERVINGS DOES YOUR RECIPE MAKE?

Just fyi, but (IF) you can eat cornflakes which some can and some can't, if you crush the cornflakes an bread the french toast in them before cooking and then cook on medium heat, it is excellent.
Of course you could sub the corn flakes with some other ideas as well really.
