Anyone have a safe recipe for Sweet Potatoe Pie?

I have really been getting into baking with the root veggie recipes on this site, but haven't come across one for sweet potatoe pie...anyone have one (Sharon the recipe goddess?!?!)?

MM10 - If you have Heather's Eating for IBS, there's a Double Decker Swwet Potato Pecan Pie on page 254-255. ] I also have a cookbook that has almost a ton of sweet potato recipes in it, but only one for pie. Stick to Heather's Pie recipe to be safe. Here are the categories in my other book:

Hi - Here's the link for a sweet potato pecan pie web page.
You could just omit the pecan layer. You can also just take the recipe on the back of a can of pumpkin, substitute sweet potato puree, use soy milk for dairy, and egg whites for whole eggs. That works beautifully. Actually, making those adjustments to just about any basic sweet potato pie recipe should take care of any problems. If the recipe calls for any butter, just substitute canola oil and make sure the quantity is no more than 3-4 T for the whole recipe.
Watch out for the crust - either use graham cracker or don't eat the regular pastry crust. They're may be some pastry crust recipes on the boards, but it's so hard to get the fat quantity down to safe levels and keep a flaky, tender result. So watch the fat content no matter what.
