Cheesey Rice and Chicken

1 can Campbells Cheddar Cheese soup 1 can water 1 pound chicken breast 1 box of frozen broccolli florets yellow rice (i prefer the Goya yellow rice mix, do not add oil)
-Clean chicken breasts and cut into 1 inch cubes. -Lightly salt and pepper chicken. -Heat up a deep, non stick pan and spray with Pam. -Cook chicken in the pan until cooked through. Make sure to toss and turn so it doesn't stick and all the chicken gets cooked thoroughly. -Place frozen brocolli in the microwave and cook according to package. -Once chicken is cooked through add the cheddar cheese soup and the water and stir until well blended. -Add the brocoli into the mix. -Let simmer on low heat for 10-15 minutes so sauce thickens a bit.
-Serve over the yellow rice and add cheesey sauce.
This totally tasted great and it did not give me an attack. My boyfriend LOVED it!!! He had thirds of it, then ate the leftovers the next day!
It was fun to make, fun to eat and didn't take long.
(i totally tried to copy the flavor from my fave Healthy Choice frozen meal-cheesey rice and chicken and it turned out tasting WAY better)

JuLee, one biiiiig problem... doesn't cheddar cheese soup contain cheddar cheese??

unfortunately i don't have the can in front of me....you can probably cut it down to 1/2 a can of soup and it'll still be as good. I don't think that would be too too bad...maybe?
i'll go home and check the ingredients and get back to you
but like i said, it didn't effect me at all, i actually felt really good afterwards

This soup has milk, cheese, milk fat, cheese culture, non-fat dry milk, butter, cream powder, and modified cheddar cheese. This would definitely not be okay for me.
I used to make chicken enchiladas with this back before IBS that's why I had a can in the cupboard.
