sauces for rice noodles?

anyone have any ideas for sauces to put on rice noodles? Jen i think it was ur recipe that i tried that you posted for the sauce but it was a bit too sweet for me! any other ideas would be great!! i like the rice noodles for a change but they are so boring alone! christine

I've been wanting to try this one that HanSolo posted. I actually got the cookbook she got it from for Christmas!
Oops, I just looked more closely and it says to serve the sauce over linguini... but I bet it would be great on rice noodles too!

fish sauce. The soy (I use La Choy since it's wheat free) and the fish sauce seem to compliment each other. Throw in some pre-cooked/cleaned shrimp and a few peas and you've got a whole meal. It's one of my favorite quick fix meals. I favor using the rice noodles for this combo but left over white rice works fine too.

Yoshida's Gourmet Sauce is great. I use slices of chicken breast and whatever vegies work for you.
